That said, you don’t have to appear cheap or forgo fun and romance altogether, either. 1. Get creative when it comes to dinner.
You really don’t have to spend $85 to $250 on a romantic dinner at a restaurant. Why not have a nice candlelit dinner at home? You could even get all dressed up for it. If you know you’re going to be too tired to cook after work on Valentine’s Day, which falls on a Wednesday this year, order a special meal ahead of time and pick it up on your way home.

2. Enjoy a little ambiance.

Remain faithful.
Dr. Finnegan Alford-Cooper studied 576 couples who had been married for 50 years or more; she released her findings in a book entitled For Keeps: Marriages that Last a Lifetime. In her study, she found that 95% of the spouses agreed that fidelity was essential to a successful marriage, and 94% agreed or strongly agreed that marriage is a long-term commitment to one person. And these "lifers" weren't making the best of a bad lot: a whopping 90% of the couples she surveyed said that they were happily married after 50+ years.
Do things together.
Another common factor of long-term happy marriages is that the spouses regularly do things together that they find fun and exciting. Whether that's ballroom dancing, bowling, playing cards, SCUBA diving, or skiing, participate in at least one activity that you both enjoy every week. If you have kids, make sure at least half of these activities are for you and your spouse only.
Spend time apart.
You take a pottery course while your spouse plays hockey; you play bridge and your partner collects stamps. February 14. It's the big game. The Super Bowl of love. You can be a hero if you remember. Forget it, and you could be left out in the cold. So, open your calendar and circle the date. Now, here are a couple of sure-fire strategies that would make even Cupid proud.

The traditional game plan will be to go for Game Day Touchdown. Send flowers, candy, a card, or more, for delivery on Valentine's Day. This strategy can be especially effective for gifts to the workplace, where they can be enjoyed by the recipient -- and envied by others -- during the workweek. But, half the guys in America will have the same brilliant idea. So, play it safe, order the week before. And, remember, there will be a lot of Valentine's gift deliveries that day - some in the morning and others in the afternoon. So, a thoughtful phone call, e-card, or romantic email message in the morning is definitely a great idea, too.

Another strategy is the pre-game Romance Blitz. Send her a card a few days early. Treat her to a romantic dinner that night. Place candies on her pillow the second evening. Then, surprise her with flowers the day before Valentine's, so they will be enjoyed more throughout Valentine's Day. Valentine Dinner Recipes: Apple Juice Roast

4 lb Chuck; boneless
2 Onion; sliced
2 tb Butter or shortening
1 c Apple juice
1 tb Catsup
1 ts Salt
1/4 ts Pepper
1/4 ts Thyme leaves
1/4 ts Prepared mustard
1/8 ts Basil leaf
3 Sweet potatoes *
Lemon juice
Garnishes:
Chopped parsley or
Apple ; rings
Gravy

*Pared and cut into pieces.
Cook onions in 1 T butter or shortening in Dutch oven until tender-crisp; set aside.

Brown roast in remaining butter or shortening in Dutch oven over medium heat 15 to 20 minutes or until browned on both sides. Pierce entire surface of meat with fork.

Combine apple juice, catsup, salt, pepper, thyme, mustard and basil; add to meat. Top meat with reserved cooked onions; cover and cook slowly 2 1/2 hours or until almost tender.

Brush sweet potatoes with lemon juice for bright color; add to meat. Continue cooking, covered, 30 to 40 minutes or until meat and potatoes are tender.

Place meat and potatoes on warm platter. Sprinkle potatoes with chopped parsley or garinish with apple rings and parsley, if desired. Serve gravy over sliced meat.

GRAVY:
Skim excess fat from cooking liquid; add water if needed to make 1 1/2 cups.

Mix 1/2 cup water and 2 T Unbleached Flour; stir gradually into cooking liquid.

Heat to boiling; cook, stirring 3 to 5 minutes. Season with salt and pepper, if desired.

Gravy may be served in Large Apple that has been scooped out, if desired.

Valentine Cookies Recipes: Angel Hair Pasta with Stir-Fried Broccoli

1 lb Angel hair pasta
Water
3 tb Olive oil
3 Cloves garlic -- finely
Chopped
1 Head broccoli, separated into flowerets
2 Red bell pepper -- diced
2 c Heavy cream
1 c Parmesan cheese -- grated
1/8 ts Nutmeg
Salt and pepper -- to taste
Parmesan cheese -- for topping

Cook the pasta in boiling, salted water for 4 to 6 minutes, or until just tender.

Drain the pasta and toss it with 1 tablespoon of the oil to keep it from sticking together, then keep it warm.

Heat the remaining 2 tablespoons of olive oil in a skillet. Add the garlic and saute it lightly; do not brown. Add the broccoli flowerets and peppers, and saute over medium heatuntil tender, about 5 to 7 minutes. Remove the vegetables from the skillet. Add the cream to the pan and bring to a boil. Reduce the heat and simmer until it starts to thicken, about 5 minutes. Add the Parmesan cheese and nutmeg, and cook an additional 2 minutes to thicken it a bit more. Add vegetables and the cooked pasta. Toss them together well. Season with salt and pepper if needed.

Serve immediately, with additional Parmesan on the side.

Romantic Dinner for you !

1 lb Chicken breasts*
2 tb oil
1 md Onion; chopped
2 ts Chili powder
1/2 ts Cumin
1/2 ts Oregano leaves; crushed
1/2 c Chicken broth
1 1/2 c V8 juice (or tomato juice)
19 oz Canned kidney beans

*Skinned and boned.
Cut the chicken into 1/2-inch pieces.

In hot oil, cook chicken, onion, chili powder, cumin and oregano until the chicken turns white.

Stir in broth and juice, heat until boiling, then reduce heat to low. Simmer 10 minutes.

Dump in beans, liquid and all, stir, cover and simmer for another 10 minutes. Stir occasionally. Serve over rice.

1 c Sugar
2 ea Eggs (unbeaten)
1 c Raisins (chopped)
2 c Rolled oats (uncooked)
2 c Flour
1 ts Baking Soda
1/4 ts Salt
1/2 c Milk
1 ts Vanilla
1/4 ts Maple extract

Cream shortening and sugar. Add eggs; beat well. Add raisins and rolled oats; mix.

Sift flour, baking soda and salt together; add alternately with milk to which vanilla and maple extract have been added.

Drop by teaspoonfuls on ungreased cookie sheet.

Bake at 375 for 10 to 12 minutes.

Yield: 3 dozen.

Valentine Cookies Recipes: Chocolate Cream-filled Valentines Sweethearts

1 1/2 c Butter; softened
1 1/2 c Powdered sugar
4 ts Vanilla extract
3 c Flour

Choclate Cream Filling:
1/2 c Heavy cream
1 c Semisweet chocolate chips

Topping:
1/4 c Powdered sugar

Cream the butter in a medium bowl with electric mixer set at medium speed. Add the sugar and beat until smooth. Add the vanilla and mix until creamy. Scrape bowl. Add flour and mix at low speed until thoroughly mixed.

Gather dough into 2 balls and flatten to disks. Wrap dough tightly in plastic wrap or place in an airtight plastic bag. Refrigerate for 1 hour or until firm.

Preheat oven to 325 degrees F.

Using a floured rolling pin, roll dough on floured board to 1/4" thickness. Cut out 2" hearts with cookie cutters. Continue using dough scraps, rerolling and recutting until all dough is used. Be careful not to overwork the dough.

Place the cookies on an ungreased cookie sheet, 1/2" apart. Bake 16-18 minutes or until firm.

Transfer to cool, flat surface.

For Chocolate Cream Filling:

Scald the cream in a small saucepan and remove from heat. Stir in the chocolate chips and cover for 15 minutes. Stir chocolate cream until smooth, then transfer to a small bowl. Set filling aside and let it cool to room temperature.

Spread 1 teaspoonful of chocolate filling on the bottom side of half of the cookies. Top with bottom side of another cookie, forming sandwich.

Repeat with remaining cookies and cream.

Sift confectioners' sugar over the finished cookies.
